What are Gingerols and Shogaols?
Gingerol (correctly, -gingerol) is the predominant phenol and most important of the pungent constituents in ginger oil. It was isolated by J. C. Thresh in 1879 from the rhizome of the ginger plant (Zingiber officinale). It and its dehydrated analogue -shogaol are the primary ginger-derived bioactive compounds.
What do Shogaols do?
Earlier studies have indicated that shogaols possess anticancer and anti-inflammatory effects. For example, 6-shogaol has been shown to induce apoptosis in human colorectal carcinoma cells via the production of reactive oxygen species and activation of caspase (Pan et al., 2008b).
How much Gingerols are in ginger?
Ginger contains approximately 1.0 to 3.0% volatile oils and a number of pungent compounds. Gingerols are the most abundant pungent compounds in fresh roots, and several gingerols of various chain-lengths (n6 to n10) are present in ginger, with the most abundant being 6-gingerol.
What chemical makes ginger spicy?
So what makes ginger hot? The chemical we normally encounter is zingerone, found in cooked ginger. Fresh ginger contains gingerol which when dried forms a third type of hot compound, 6-shogaol.
Does ginger contain capsicum?
Initial studies have shown that the active ingredients in ginger — compounds called gingerols — have a similar structure to capsaicin, the active ingredient of chilli peppers and capsicum, a known pain reliever.
What chemical removes pungency of ginger?
Cooking ginger transforms gingerol via a reverse aldol reaction into zingerone, which is less pungent and has a spicy-sweet aroma….Gingerol.
Is Chinese ginger the same as regular ginger?
Grocery Store Ginger The type of ginger found in most U.S. grocery stores is called Chinese ginger or common ginger. It is usually imported from areas such as China and India. It has a very subtle flavor and fairly large rhizomes.
Does cinnamon have capsaicin?
Cinnamon is spicy — but in a different way than chili peppers. While the spiciness of chili peppers largely comes from a chemical called capsaicin, cinnamon contains very little capsaicin. However, cinnamon has higher levels of cinnamaldehyde and eugenol.
What foods contain the most capsaicin?
Note that the list below is based on SHUs reported by the Institute of Food & Agricultural Services at the University of Florida.
- Carolina Reaper: 2,009,000 Scoville Heat Units (SHU)
- Ghost Pepper: 1,041,427 SHU.
- Habanero: 100,000 to 350,000 SHU.
- Thai Pepper: 50,000 to 100,000 SHU.

Does ginger have any negative effects?
It can cause mild side effects including heartburn, diarrhea, burping, and general stomach discomfort. Taking higher doses of 5 grams daily increases the risk for side effects. When applied to the skin: Ginger is possibly safe when used short-term. It might cause skin irritation for some people.
Does ginger contain oleoresin?
Ginger contains essential oils and oleoresins. The extraction of ginger in ethanol produced non-volatile components in oleoresins, such as gingerol, that might have converted into shogaol during heating or storage [1,2]. It was reported that the major compound in the oleoresin is 6-gingerol, ie.
Is shogaol metabolized in cancer cells?
Our previous study found that -shogaol, a major bioactive component in ginger, is extensively metabolized in cancer cells and in mice. It is unclear whether these metabolites retain bioactivity.
What is the chemical formula for shogaol?
-Shogaol is a monomethoxybenzene, a member of phenols and an enone. InChI=1S/C17H24O3/c1-3-4-5-6-7-8-15 (18)11-9-14-10-12-16 (19)17 (13-14)20-2/h7-8,10,12-13,19H,3-6,9,11H2,1-2H3/b8-7+
What is the concentration of -shogaol in cancer cells?
Two human cancer cell lines, HCT-116 and H-1299, were treated with -shogaol or its synthetic metabolites M1, M2, and M4–M13, with concentrations ranging from 0 to 80 µM.
Is shogaol an active ingredient in the treatment of diabetes?
;SOLUTION: The therapeutic or the prophylactic agent for diabetes and/or obesity comprises shogaol as an active ingredient. The shogaol is preferably 6-shogaol.
